20120325-083735.jpgPoaching eggs and putting them on a muffin covering them in sauce isn’t too terribly hard. You can make the hollandaise sauce or you can just get a pre made mix.

Poaching the eggs is not hard. Boil some water and when it’s boing turn it down do it doesn’t boil. Make sure theres enough water to just keep them off the bottom Add some vinegar. Rice vinegar is good too, the kind we make sushi with.

Drop some mason jar lids in the bottom of the pan and break your eggs in them. This keeps them together. Turn off the fire, cover with a lid and let sit for four minutes.

Use a slotted spoon to take the eggs out. Put on a toasted muffin, add some sliced ham or turkey or nothing and add sauce and garnish with paprika and parsley.
